The University of Kansas Medical Center has an article on its web page discussing healthy cooking oils that many people might find useful.

It did mention that canola because it is high in alpha linolenic acid and so when heated caused the formation of carcinogens and mutagens. It didn't give a reference nor was there further discussion on it. However, I did find a research reference from the National Cancer Institute that stated, "Condensates from heated linolenic acid, but not linoleic or erucic acid, were highly mutagenic" referring to the fumes from high temperature wok cooking by Chinese woman.
